{"id":162,"date":"2023-06-21T02:16:45","date_gmt":"2023-06-21T02:16:45","guid":{"rendered":"https:\/\/demo-2.vidowebs.com\/web-46\/?page_id=162"},"modified":"2023-07-15T20:52:54","modified_gmt":"2023-07-15T20:52:54","slug":"about-us","status":"publish","type":"page","link":"https:\/\/demo-2.vidowebs.com\/web-46\/about-us\/","title":{"rendered":"About Us"},"content":{"rendered":"<p>A few weeks ago I interviewed Vietopia Bistro owner Kvin (yes, he said that\u2019s how he spells his name) Doan for a\u00a0<a href=\"https:\/\/www.standard.net\/lifestyle\/food\/2023\/mar\/21\/vietopia-bistro-is-all-about-vietnamese-cuisine\/\">Standard-Examiner story<\/a>.<\/p>\n<p>The\u00a0<a href=\"https:\/\/www.shopatstationpark.com\/store\/Vietopia-Bistro\/2138994602\/\">Station Park\/Farmington Vietopia<\/a>\u00a0is on a side street near Bath &amp; Bodyworks. It\u2019s one of a few Station Park restaurants there that offer sit-down service \u2014 I think\u00a0<a href=\"https:\/\/chewandchat.com\/2019\/09\/p-f-changs-woks-into-farmington.html\">P.F. Chang\u2019s,<\/a>\u00a0<a href=\"https:\/\/chewandchat.com\/2019\/07\/chew-and-chat-lunch-at-twigs-bistro-martini-bar.html\">Twigs<\/a>\u00a0and\u00a0<a href=\"https:\/\/chewandchat.com\/2020\/10\/tucanos.html\">Tucanos<\/a>\u00a0offer sit-down service too. Manager of the Station Park Vietopia Bistro location (on the left) is Vinh Doan.<\/em><\/figcaption><\/figure>\n<p>Doan grew up in Ho Chi Min City (formerly Saigon), which is in the southern part of Vietnam. \u00a0At 19, he moved to the U.S.A. He spent some time working at\u00a0<a href=\"https:\/\/www.pandaexpress.com\/\">Panda Express<\/a>, and noticed there were many Chinese food franchises, but didn\u2019t see any Vietnamese restaurant chains.<\/p>\n<p>\u201cI love the food, and I want to let everyone get to know Vietnamese food and make it popular,\u201d he said.<\/p>\n<p>He opened the first\u00a0<a href=\"https:\/\/www.facebook.com\/TaylorsvilleVietopia\">Vietopia Bistro\u00a0<\/a>in 2014 in West Jordan. He designed his own logo: a triangular-shaped Vietnamese hat (called non la) on the top side. If you turn it upside down, it appears as a bowl of noodles.<\/p>\n<p>Over time, Doan added locations in Taylorsville, Draper, and downtown Salt Lake City. A baguette is stuffed with a choice of grilled protein (shrimp, pork, beef, or tofu), topped with cucumber, pickled carrots and daikon, cilantro, jalapeno, soy sauce and mayo. They\u2019re filled with ground pork, carrots, onions and mung beans sprouts. They are served with fish sauce (nuoc mam). Thin rice paper is wrapped around shrimp, pork, vermicelli, and lettuce, and served with a peanut dipping sauce.
